The exact bowl I make when people come over, why every ingredient earns its place in your gut, and how to make it your own.

Whenever friends come over, I cook a version of the same thing. One pot, deep red from beetroot, warm with cumin, lentils holding it all together, a scatter of herbs and seeds on top, yoghurt or feta melting into the heat. Nobody has ever asked me for the healthy version, because it does not taste like a compromise. It tastes like a Tuesday I actually looked forward to.

But under the flavour, this bowl is doing something specific. It is one of the easiest ways I know to hit a wide range of plants in a single meal, to feed the microbes that make the compounds your gut lining runs on, and to do it without anyone at the table feeling like a patient. I get asked for this recipe more than almost anything else I make, so this month it is yours, with the reason every ingredient is in there.
